Crispy Cod with Berry Salsa

The great thing about Cod is the flexibility of what you can add to it. It doesn’t have much of a flavor which makes it go great with a berry sweet salsa. Cod is high in vitamin B12,  selenium, phosphorus and protein. It is also a very good source of choline as well as a good source of niacin, potassium, vitamin B6, and fatty acids. Please get Wild Caught to get the best nutritional benefits.

What you will need:
1lb Wild Caught Cod ( They usually come in 1 inch fillets) The pack I got had 8
1 Tbs Avocado Oil
2 Smashed Garlic Cloves
Sea Salt
2 Tbs Lemon juice ( 1 Medium lemon)

For the Salsa
1 Cup Strawberries
1/2 Cup Blueberries
1/4 Cup Yellow or Red Onion
3 Tbs Cilantro ( does not need to be precise you can add more if you like)
Zest and juice of one lime


For the Fish
Heat skillet on high heat and add in the avocado oil.
Once skillet is hot add in the smashed garlic and wait till you can smell the garlic ( 2 minutes or so)
Add in the cod and be careful about splattering oil. Turn down the heat after 1 minute.
Allow to cook for 3- 4 minutes and flip over for an additional 3-4 minutes.
Squeeze lemon juice over and add extra butter if you desire.
You’ll know when the fish is done when it gets to be an opaque color and a bit firm to the touch.

For the Salsa

Chop onion into small pieces and dice the strawberries.
In a small bowl smash the blueberries with a fork, or blend in the blender.
Mix all the ingredients together : Onion, strawberries, blueberries and cilantro and lime juice and zest.
Place on top of Cod when it is done.
