The holidays are around the corner and I am already preparing for delicious and healthy foods that we can enjoy. This recipe I found on Paleomg.com and tweaked it a bit based off of things that I had already in my cabinets.
Ingredients for Crust
1 1/2 Cup Almond Flour
1/4 Cup & 1 Tbs Coconut Flour
1/4 Cup & 1 Tbs Tapioca Flour
1/2 Tsp Baking Soda
4 Tbs Melted Grass Fed Butter [Unsalted]
2 Tbs Honey or Coconut oil
1 Tsp Vanilla Extract
Ingredients for Coconut Glaze
1 Can Coconut Cream [ Room Temperature]
2 Tbs Honey
1 Tsp Vanilla Extract
Ingredients for Filling
4 Apples Peeled and cut into Cubes or thin slices
2 Tbs Grass Fed Butter or Coconut oil
1 1/2 Tsp Cinnamon
3/4 Tsp Nutmeg
1/2 Tsp All spice.
Start with the crust. You can use a tart pan or a cake pan but a tart pan is easiest.
~Preheat oven to 350 degrees . Mix all ingredients together, using a food processor is recommended but not needed. I used a blender and made sure not to over mix.
~Make sure to coat the pan thoroughly with butter or oil so the crust does not stick.
~Press the dough into the pan and make sure to get all the edges. Don’t worry to much, once the dough rises it will take up plenty of room so the apples and sauce stay in between the perimeter of the pan.
~Place crust in oven for 10-15 minutes or until light brown. Then remove and allow to cool.
~ Peel and dice apples. You can either cut them into cubes or thinly slice them.
~ Place the Butter or oil in pan and add in the apples and seasoning.
~ Be sure not to keep the flame too high, cook the apples till tender.
~ Set aside when done
The Coconut Glaze
Honestly this doesn’t even taste like coconut to me but if you have a sensitive pallet feel free to substitute out a different sauce. My step dad absolutely HATES coconut and he devoured this recipe in world record time, he still doesn’t know it was coconut.
~In a small sauce pan add the whole can of coconut cream.
~Whisk in the honey. If you don’t want to use honey you can substitute out 1/4 Cup Brown sugar / 2 Tsp stevia / 2 Tbs Xylitol
~ Do not add in the vanilla extract yet.
~ Bring the mixture to a boil and then allow it to boil for 3-5 minutes without bubbling over.
~ It should start to foam up/ bubble up. Allow it to do so, and after the 3-5 minutes turn the heat off and let it sit for 3 minutes or so and place in a container and add the vanilla extract.
~ If you want it thicker you can place it into the fridge.
Lastly, Combine all items and your good to go!!!
Toasted Pecans Pieces on top
1/2 Cup Pecans or Walnuts
1/4 Cup Maple Syrup
~ Place ingredients in pan over medium heat[ you can use the same pan you made the glaze in] and cook for 5 minutes. 1 Tbs butter goes good with this too.
~ Once done place over finished dessert
